2 tbsp oil

Vegetable Upma Recipe (Step-by-Step)
Step 1: Roasting Semolina
Roast the semolina in a dry pan till it turns light golden. Keep it aside.
Tip: Roast the semolina on low flame so that it does not burn.
Step 2: Tempering
Heat oil in a pan.
Add mustard seeds – when they crackle, add urad dal and curry leaves.
Now add green chillies and ginger.
Step 3: Cooking the Vegetables
Add onion and fry till it turns light pink.
Then add carrots, peas and other vegetables and cook for 2–3 minutes.
Step 4: Add water
Now add 2 cups of water and salt.
Bring to a boil.
Step 5: Add semolina
Gradually add the roasted semolina and stir continuously to prevent lumps from forming.
The upma will thicken and be ready in 2–3 minutes.
Finally, add lemon juice and coriander leaves.
